Reserve two tablespoons of flour; combine the remaining flour with baking powder, baking soda, salt, and spices. Combine peanuts with reserved flour; toss until each piece is coated with the flour. Fold mixture into batter. Beat egg whites until stiff peaks form. Fermentation will slow over the next 6-8 weeks. Bottle when the wine has settled and is clear and no longer fermenting. Leave to age as long as you can. The three-year-old stuff is essential.
